Authentic Moroccan Kaab el Ghazal Recipe (Gazelle Horns)


Introduction

Kaab el Ghazal, also known as Gazelle Horns, is a traditional Moroccan pastry made with a buttery, thin dough filled with a sweet almond paste and flavored with orange blossom water and cinnamon. These delicate, crescent-shaped treats are often served at special occasions, including weddings, Eid, and family gatherings.

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 2 tablespoons butter, melted
  • 1 tablespoon vegetable oil
  • 1 tablespoon orange blossom water
  • 1/2 teaspoon salt
  • 1/2 cup warm water (adjust as needed)

For the Almond Filling:

  • 2 cups blanched almonds, finely ground
  • 3/4 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons orange blossom water
  • 1 tablespoon butter, softened

For Garnishing (Optional):

  • 1 egg yolk (for brushing)
  • Powdered sugar (for dusting)

Instructions

Step 1: Prepare the Almond Filling

  • In a bowl, mix ground almonds, powdered sugar, cinnamon, butter, and orange blossom water until you get a smooth, moldable paste.
  • Shape the filling into small, thin logs (about 2 inches long).

Step 2: Make the Dough

  • In a separate bowl, mix flour, melted butter, oil, salt, and orange blossom water.
  • Gradually add warm water, kneading for 10–15 minutes until the dough is soft and elastic.
  • Cover the dough with a cloth and let it rest for 30 minutes.

Step 3: Shape the Kaab el Ghazal

  • Roll out the dough into thin sheets.
  • Place an almond filling log on the dough and fold it over, sealing the edges tightly.
  • Shape each piece into a crescent (horn-like) shape.
  • Trim excess dough and pinch the edges to secure the seal.

Step 4: Bake the Pastries

  • Preheat the oven to 325°F (160°C).
  • Place the pastries on a baking sheet lined with parchment paper.
  • Lightly brush with egg yolk for a golden finish (optional).
  • Bake for 15–20 minutes, or until lightly golden.

Step 5: Final Touches

  • Let them cool completely before dusting with powdered sugar (optional).
