Introduction

Moroccan Tagine is a slow-cooked, flavorful dish made with tender meat, aromatic spices, and fresh vegetables, all simmered together in a traditional clay pot known as a tagine. This iconic dish is an essential part of Moroccan cuisine and can be made with chicken, lamb, beef, or fish, often combined with olives, preserved lemons, dried fruits, or nuts for a rich, savory-sweet balance.

Ingredients

For the Tagine:

  • 2 lbs (900g) lamb, chicken, or beef, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 1 tomato, grated
  • 1/2 cup green olives
  • 1 preserved lemon, cut into quarters (optional)
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon (for a subtle sweetness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon saffron threads (optional, for authentic Moroccan flavor)
  • 1/4 teaspoon chili flakes (optional, for spice)
  • 3 cups water or broth
  • 1/2 cup dried apricots or prunes (optional, for sweetness)
  • 1/4 cup toasted almonds (for garnish)
  • Fresh cilantro or parsley, chopped

Instructions

Step 1: Prepare the Tagine Base

  1. Heat olive oil in a tagine pot or a heavy-bottomed pot over medium heat.
  2. Add the meat and sear on all sides until browned.
  3. Stir in the onion and garlic, and cook for 3-4 minutes until softened.

Step 2: Add the Spices & Liquid

  1. Sprinkle ginger, turmeric, paprika, cumin, cinnamon, salt, black pepper, and saffron over the meat, stirring to coat evenly.
  2. Add the grated tomato and water or broth, ensuring the liquid covers the meat.
  3. Cover and let simmer for 1 hour on low heat, stirring occasionally.

Step 3: Cook the Vegetables & Add Flavor

  1. After 1 hour, add carrots, zucchinis, olives, preserved lemon, and dried apricots (if using).
  2. Continue to simmer for 30 minutes until the vegetables are tender and the meat is falling apart.

Step 4: Serve & Garnish

  1. Garnish with toasted almonds and fresh cilantro or parsley.
  2. Serve hot with Moroccan bread (Khobz) or couscous.
