Introduction

Msemen is a traditional Moroccan pancake with a crispy, flaky texture and a soft, chewy inside. It is typically enjoyed for breakfast or tea time, served with honey, butter, or cheese. This layered flatbread is popular across North Africa, particularly in Morocco, Algeria, and Tunisia.

Ingredients

For the Dough:

  • 4 cups all-purpose flour
  • 1 cup fine semolina
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dry yeast (optional, for softer msemen)
  • 1 1/2 cups warm water (adjust as needed)

For the Lamination (Folding & Stretching):

  • 1/2 cup vegetable oil
  • 1/2 cup melted butter
  • 1/2 cup fine semolina

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, mix flour, semolina, salt, sugar, and yeast (if using).
  2. Gradually add warm water, kneading until a soft, elastic dough forms.
  3. Divide into small balls (golf ball size), coat with oil, and let them rest for 30 minutes.

Step 2: Shape & Fold the Msemen

  1. Grease your work surface with oil. Flatten each ball using your fingers until it forms a thin, translucent sheet.
  2. Sprinkle with a mix of butter and oil, then lightly dust with semolina.
  3. Fold the dough from all sides into a square shape, creating thin layers inside.

Step 3: Cook the Msemen

  1. Heat a non-stick pan over medium heat.
  2. Cook each msemen square for 2-3 minutes per side, pressing gently until golden and crispy.
