Introduction

Moroccan Harira is a rich and flavorful tomato-based soup made with lentils, chickpeas, and aromatic spices. This hearty dish is a staple in Moroccan cuisine, especially during Ramadan, when it is served to break the fast. Harira combines warm spices, fresh herbs, and tender legumes, creating a comforting and nourishing soup that is loved across Morocco.

Ingredients

For the Harira:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 celery stalk, chopped
  • 1 cup cooked chickpeas (or canned, drained)
  • 1/2 cup brown or green lentils
  • 1/4 cup vermicelli noodles (optional)
  • 1 carrot, grated
  • 4 ripe tomatoes, blended or grated
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon cinnamon (optional, for authentic Moroccan flavor)
  • 6 cups vegetable or chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup flour (mixed with water to thicken the soup)
  • 1 lemon, cut into wedges (for serving)

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and celery, and sauté for 3-4 minutes until softened.

Step 2: Build the Base

  1. Stir in the grated carrot, tomatoes, and tomato paste, cooking for another 5 minutes.
  2. Add the cumin, ginger, paprika, turmeric, black pepper, and cinnamon, stirring well to combine.

Step 3: Simmer the Soup

  1. Pour in the broth and bring to a boil.
  2. Add the lentils and chickpeas, then reduce the heat to low.
