Authentic Moroccan Ghriba Recipe – Traditional Moroccan Shortbread Cookies
Introduction
Ghriba is a classic Moroccan cookie known for its crumbly, buttery texture and rich nutty flavors. These shortbread-style cookies are often made with almonds, sesame seeds, coconut, or walnuts, and are commonly served with Moroccan mint tea during Eid, weddings, and family gatherings.
Ingredients
Basic Ghriba Dough:
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup butter, softened
- 1/4 cup vegetable oil
For Almond Ghriba (Optional):
- 1 cup ground almonds
- 1 teaspoon orange blossom water
For Coconut Ghriba (Optional):
- 1 cup grated coconut
For Garnishing:
- Powdered sugar (for dusting)
- Toasted sesame seeds (optional)
Instructions
Step 1: Prepare the Dough
- In a bowl, mix flour, powdered sugar, baking powder, salt, and vanilla extract.
- Add the softened butter and vegetable oil, then knead until a smooth, soft dough forms.
- If making almond or coconut Ghriba, fold in the additional ingredients at this step.
- Let the dough rest for 20 minutes.
Step 2: Shape the Cookies
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Roll the dough into small balls (about 1 inch in diameter).
- Gently press each ball to create a slightly flattened shape.
- Optionally, dust with powdered sugar or sprinkle with sesame seeds.
Step 3: Bake the Ghriba
- Bake for 12–15 minutes, or until the cookies develop a cracked surface but remain soft inside.
- Let them cool on the baking sheet before transferring them to a wire rack.
