Introduction

Ingredients

For the Couscous:
  • 2 cups couscous (medium grain)
  • 2 cups warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 tablespoons butter
For the Stew:
  • 1 lb (500g) lamb, chicken, or beef, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and cut into large pieces
  • 2 zucchinis, sliced
  • 1 turnip, chopped
  • 1 tomato, grated
  • 1/2 cup chickpeas (cooked or canned)
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups water or broth
  • 1/4 cup raisins (optional, for sweetness)
For Garnishing:
  • 1/2 cup toasted almonds
  • Fresh cilantro or parsley, chopped

Instructions

Step 1: Prepare the Couscous

  1. Place the couscous in a large bowl. Add olive oil and mix well to coat the grains.
  2. Gradually add warm water and fluff with a fork to avoid clumping. Let it rest for 10 minutes.
  3. Steam the couscous using a couscoussier (or a steamer) for 15 minutes, then remove and fluff again. Repeat this steaming process twice more.
  4. Add butter and mix well before serving.

Step 2: Cook the Stew

  1. Heat olive oil in a large pot over medium heat. Add the meat and cook until browned.
  2. Stir in the onion and garlic, sautéing until softened.
  3. Add the tomato, spices, and salt. Cook for a few minutes until fragrant.
  4. Pour in water or broth, then cover and let it simmer for 45 minutes (or until the meat is tender).
  5. Add the carrots, turnip, and chickpeas, and cook for another 15 minutes.
  6. Finally, add the zucchini and raisins, cooking for 10 more minutes.

Step 3: Assemble and Serve

  1. Place the steamed couscous on a large serving dish.
  2. Make a well in the center and pour the stew over the couscous.
  3. Arrange the vegetables on top and garnish with toasted almonds and fresh cilantro.
  4. Serve warm with a side of harissa or Moroccan bread.
