 Traditional Saudi Saliq Recipe: A Creamy Rice Delight


Saliq is a classic Saudi Arabian dish known for its creamy texture and rich flavors. This comforting dish consists of tenderly cooked rice, infused with milk and aromatic spices, making it a staple in Saudi cuisine.

Ingredients:

  • 2 cups basmati rice (washed and soaked for 30 minutes)
  • 1 kg chicken (cut into pieces)
  • 4 cups water
  • 2 cups full-fat milk
  • 2 tbsp butter
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp cardamom powder
  • 1/2 tsp cinnamon powder
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1/2 tsp ground white pepper
  • 1 tbsp ghee (for garnish)

Instructions:

1-Prepare the Chicken Broth:

  • In a large pot, heat butter and sauté onions until golden.
  • Add garlic, bay leaf, cardamom, cinnamon, black pepper, and salt. Stir well.
  • Add the chicken pieces and cook for a few minutes until they turn golden.
  • Pour in water and bring to a boil. Reduce heat and let it simmer for 40 minutes until the chicken is tender.
  • Remove the chicken and set aside. Strain the broth to remove any solids.

          2-Cook the Rice:

          • In the same pot, add the soaked and drained rice to the strained broth.
          • Let it cook on medium heat until the water is absorbed.
          • Reduce the heat, add milk, and stir continuously to achieve a creamy texture.
          • Allow the rice to simmer gently for another 10 minutes.

                3-Prepare the Chicken Garnish:

                • In a separate pan, heat ghee and lightly fry the cooked chicken until golden brown.
                • Sprinkle white pepper for an extra layer of flavor.

                4-Serve:

                • Spoon the creamy Saliq onto a serving platter.
                • Place the golden chicken on top and drizzle with ghee.
                • Garnish with fried onions or toasted nuts if desired.

                Serving Suggestions:

                Saliq is best enjoyed with a side of fresh yogurt, tomato salsa, or a squeeze of lemon for added zest.
