Authentic Saudi Matazeez Recipe: A Traditional Arabian Delight


Matazeez is a beloved Saudi Arabian dish known for its hearty and flavorful combination of tender meat, vegetables, and handmade dough pieces. This slow-cooked stew is rich in Middle Eastern spices and is a staple in traditional Saudi cuisine.

Ingredients:

For the Dough:

  • 2 cups whole wheat flour
  • 1/2 cup water (adjust as needed)
  • 1/2 tsp salt
  • 1 tbsp olive oil

For the Stew:

  • 500g lamb or beef (cut into chunks)
  • 2 tbsp vegetable oil
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 2 large tomatoes (chopped)
  • 2 tbsp tomato paste
  • 1 large carrot (sliced)
  • 1 zucchini (sliced)
  • 1 potato (cubed)
  • 1 cup pumpkin (optional, cubed)
  • 1 green bell pepper (sliced)
  • 4 cups water or broth
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp ground cardamom
  • 1/2 tsp cinnamon
  • 1 dried black lemon (loomi)

Instructions:

1-Prepare the Dough:

  • In a mixing bowl, combine whole wheat flour and salt.
  • Add water gradually, kneading until a firm dough forms.
  • Add olive oil and knead again until smooth.
  • Cover and let it rest for 30 minutes.
  • Roll out the dough and cut it into small, thin circles. Set aside.

2-Prepare the Stew:

  • Heat oil in a large pot over medium heat. Add chopped onions and garlic, sautéing until golden.
  • Add the meat and brown on all sides.
  • Stir in chopped tomatoes and tomato paste, cooking until softened.
  • Add the spices (salt, black pepper, cumin, coriander, cardamom, and cinnamon) along with the dried black lemon.
  • Pour in water or broth and bring to a boil. Reduce heat and let it simmer for 40-50 minutes until the meat is tender.

3-Add Vegetables and Matazeez Dough:

  • Add carrots, potatoes, pumpkin, zucchini, and bell peppers. Stir well.
  • Gently drop the prepared Matazeez dough circles into the stew.
  • Let it simmer for another 20-30 minutes until the dough is fully cooked and has absorbed the flavors.

4-Serve:

  • Transfer the hot, flavorful Matazeez to a serving dish.
  • Garnish with fresh parsley or coriander.
  • Serve with fresh bread or enjoy as is.
