Authentic Kabsa Recipe: A Traditional Saudi Arabian Dish


Introduction:

Kabsa is a famous Saudi Arabian rice dish known for its rich flavors, aromatic spices, and tender meat. This traditional Saudi Arabian Kabsa recipe features perfectly seasoned rice, slow-cooked meat (chicken, lamb, or beef), and a blend of warm Middle Eastern spices. Whether served at family gatherings or special occasions, Kabsa remains a staple of  Saudi Kitchen.

Ingredients:

For the Meat:

  • 1 kg chicken (or lamb/beef), cut into large pieces
  • 3 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, finely chopped
  • 2 tbsp tomato paste
  • 1 cinnamon stick
  • 3 cardamom pods
  • 4 cloves
  • 2 bay leaves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp salt

For the Rice:

  • 2 cups long-grain basmati rice, washed and soaked for 30 minutes
  • 4 cups chicken or beef broth
  • 1 large carrot, grated
  • 1/2 cup raisins (optional)
  • 1/2 cup almonds or pine nuts, toasted (for garnish)

Instructions:

Step 1: Sauté the Aromatics

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Stir in the garlic and cook until fragrant.

Step 2: Cook the Meat

  1. Add the meat to the pot and brown on all sides.
  2. Stir in the chopped tomatoes and tomato paste.
  3. Add all the spices (cinnamon stick, cardamom, cloves, bay leaves, cumin, coriander, black pepper, paprika, turmeric, and salt).
  4. Pour in 4 cups of water and bring to a boil. Reduce the heat, cover, and let simmer for 45 minutes (for chicken) or 1.5 hours (for lamb or beef) until the meat is tender.

Step 3: Prepare the Rice

  1. Remove the meat and set aside. Strain the broth and return it to the pot.
  2. Add the soaked basmati rice and grated carrot. Stir gently.
  3. Cover and cook on low heat for 20 minutes or until the rice absorbs all the liquid and becomes fluffy.

Step 4: Assemble & Serve

  1. Place the cooked meat on top of the rice and let it rest for 5 minutes.
  2. Garnish with toasted almonds, pine nuts, and raisins.
  3. Serve hot with a side of yogurt, Arabic salad, or shatta (spicy sauce).

Tips for the Best Kabsa:

  • Use high-quality basmati rice for the perfect fluffy texture.
  • Slow cook the meat to enhance the flavors.
  • Adjust the spices according to your taste preference.
  • For an extra smoky flavor, add a piece of burning charcoal to the pot, cover, and let it infuse for a few minutes.
