Authentic Kabsa Recipe: A Traditional Saudi Arabian Dish

Ingredients:
For the Meat:
- 1 kg chicken (or lamb/beef), cut into large pieces
- 3 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, finely chopped
- 2 tbsp tomato paste
- 1 cinnamon stick
- 3 cardamom pods
- 4 cloves
- 2 bay leaves
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground black pepper
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp salt
For the Rice:
- 2 cups long-grain basmati rice, washed and soaked for 30 minutes
- 4 cups chicken or beef broth
- 1 large carrot, grated
- 1/2 cup raisins (optional)
- 1/2 cup almonds or pine nuts, toasted (for garnish)
Instructions:
Step 1: Sauté the Aromatics
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the garlic and cook until fragrant.
Step 2: Cook the Meat
- Add the meat to the pot and brown on all sides.
- Stir in the chopped tomatoes and tomato paste.
- Add all the spices (cinnamon stick, cardamom, cloves, bay leaves, cumin, coriander, black pepper, paprika, turmeric, and salt).
- Pour in 4 cups of water and bring to a boil. Reduce the heat, cover, and let simmer for 45 minutes (for chicken) or 1.5 hours (for lamb or beef) until the meat is tender.
Step 3: Prepare the Rice
- Remove the meat and set aside. Strain the broth and return it to the pot.
- Add the soaked basmati rice and grated carrot. Stir gently.
- Cover and cook on low heat for 20 minutes or until the rice absorbs all the liquid and becomes fluffy.
Step 4: Assemble & Serve
- Place the cooked meat on top of the rice and let it rest for 5 minutes.
- Garnish with toasted almonds, pine nuts, and raisins.
- Serve hot with a side of yogurt, Arabic salad, or shatta (spicy sauce).
Tips for the Best Kabsa:
- Use high-quality basmati rice for the perfect fluffy texture.
- Slow cook the meat to enhance the flavors.
- Adjust the spices according to your taste preference.
