Authentic Haneeth Recipe: Traditional Saudi Arabian Slow-Cooked Lamb

Instructions

Step 1: Marinate the Lamb

  1. In a bowl, mix olive oil, salt, black pepper, cumin, coriander, cardamom, cinnamon, turmeric, paprika, garlic, and lemon juice.
  2. Rub the mixture all over the lamb pieces and let it marinate for at least 2 hours (preferably overnight).

Step 2: Slow Cook the Lamb

  1. Preheat the oven to 160°C (320°F).
  2. Place the lamb in a deep baking dish with bay leaves and 1 cup of water.
  3. Cover tightly with foil and cook for 3-4 hours until the meat is tender and falls off the bone.
  4. Remove the foil and broil for 5-10 minutes for a golden-brown crust.

Step 3: Cook the Rice
