Introduction:

Jareesh (or Harees) is a beloved traditional Saudi Arabian dish made from crushed wheat, slow-cooked with meat, yogurt, and aromatic spices. This hearty dish has a creamy texture and is packed with rich flavors, making it a staple in Arabian cuisine. Jareesh is commonly enjoyed in Saudi Arabia, particularly in the central region of Najd, as a comforting and satisfying meal.

Ingredients:

For the Jareesh:

  • 2 cups crushed wheat (Jareesh)
  • 1 liter water or meat broth
  • 500g chicken or lamb, cut into small pieces
  • 1 cup yogurt
  • 1 medium onion, finely chopped
  • 2 tbsp ghee or butter
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cardamom

For Garnishing:

  • 1 tbsp ghee or butter
  • 1 small onion, thinly sliced and fried (for topping)
  • 1/2 tsp ground cinnamon
  • Toasted almonds (optional)

Instructions:

Step 1: Prepare the Jareesh

  1. Rinse the crushed wheat thoroughly and soak it in water for 30 minutes.
  2. In a deep pot, melt 2 tbsp of ghee or butter over medium heat.
  3. Add the chopped onion and sauté until golden and fragrant.
  4. Add the chicken or lamb pieces and cook until they turn golden brown.
  5. Season with salt, black pepper, cumin, coriander, and cardamom, stirring well.
  6. Pour in the water or meat broth and bring it to a boil.

Step 2: Cook the Jareesh

  1. Drain the soaked Jareesh and add it to the pot.
  2. Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, stirring occasionally.
  3. Once the Jareesh has softened and absorbed the liquid, add the yogurt and mix well.
  4. Continue cooking on low heat for another 15-20 minutes until it reaches a creamy consistency.

Step 3: Garnish & Serve

  1. In a small pan, melt 1 tbsp of ghee or butter and lightly toast the cinnamon.
  2. Pour the cinnamon-infused ghee over the Jareesh.
  3. Garnish with fried onions and toasted almonds (optional).
